Finca Saboritas is a small-scale farm next to Parque Natural de la Sierra Calderona in Spain. The 100-year-old olives are processed at a height of more than 500m using natural and traditional cultivation methods to preserve their distinctive features.
Serrana de Espadán olives are well-known due to their excellent fruity taste, mild and sweet, without bitterness and with little acerbity. The olives are harvested at the optimal stage of ripeness and are processed under gentle processing conditions to yield their extraordinary juice.
The fact that the farm from time to time offers non-certified oil in addition to organic-certified oil is due to the fact that it constantly takes up newly abandoned olive groves and brings the olive trees there back to bear in order to preserve old varieties and thus also to preserve the local landscape of the mountain terraces with small fields that are not irrigated artificially.
Since each "new" tree must also be re-registered and some time passes until its olives can also be certified organic, the operators also have high-quality olive oil without certification, which Café Libertad includes in the program to support this sustainable approach.
First grade - obtained directly from the olives exclusively with mechanical processes.
